Ideas for Dairy Lunches

For those of us whose children attend a synagogue nursery school or kindergarten or a jewish day school, dairy or pareve lunches are a must.  So...what do we pack when turkey sandwiches are no longer an option?  Here's a list of some dairy or pareve (neither milk nor meat) lunches that my kids have enjoyed.

Tuna fish sandwiches

Egg salad sandwiches

a slice of cold pizza

falafels (there is a really easy mix from Manischewitz--I saute the balls in canola oil rather than deep fry them.  Then I take a whole wheat pita, put in some shredded lettuce, cut up tomoatoes, cucumbers, hummus and falafel balls, wrap it up in foil and yum! I prepare the falefel balls on Sunday (the mix makes 12) and it's easy to put the sandwiches together in the morning while the kids are eating breakfast.  To make it even easier, I bought shredded lettuce and cut up veggies from the salad bar at the supermarket).

salmon croquettes (mash canned salmon with one eggmustard, mayo, a boiled potato.  form into a patty and lightly cover with bread crumbs or matzo meal. Fry in canola oil until cooked through.  Serve on saltine crackers.)

grilled veggie pasta salad (I tossed red peppers and red onions with olive oil and salt and grilled them outside on the bar-b-que.  Then I prepared some rigatoni.  After the rigatoni is cooked, I drain the water, reserving 1 cup and toss in a bag of fresh spinach.  Then I add the reserved water, the grilled veggies (cut up into bite sized pieces) and a hand full of shredded parmesan cheese.  You can also make this ahead on Sunday and simply scoop a container full for the lunch box.) recipe adapted from Real Simple magazine, July 2008)

salad (pack a bag of dressing from your grocery store salad bar so salad stays crisp)

pb&j (unless your child goes to a peanut-free school)

cream cheese and jelly sandwich (I used to love these!)

bagel and tuna fish

cold pizza bagel

cold pasta

yogurt

fruit salad

cheese and crackers and fruit

sardine sandwich (my husband suggested this one)

jelly sandwich

apples and peanut butter (unless your child attends a peanut-free school)

lettuce, carrots and other veggies and shredded cheese in a flour tortilla

pita and hummus

veggies and hummus
